Sautéed Broccoli Rabe with Caramelized Onions and Steamed Potatoes

(this recipe was designed with the December 2-3 Meals Box in mind)

Ingredients:

1 bunch of Broccoli Rabe, trimmed

5 T olive oil

1 clove garlic, minced

1 T grated parmesan cheese

1 large onion, sliced

1 T olive oil

½ T light brown sugar

3 small-medium Kennebec Potatoes, washed then cut into ¼ inch pieces and steamed for about 18 minutes

Directions:

In a large pot of salted boiling water, place the trimmed broccoli rabe in the boiling water and cook until tender but still firm, about 5 minutes. Drain and set aside. In a large skillet heat 1 T of olive oil and then add the sliced onions, let them cook until they begin to clear and then add the light brown sugar and continue to stir and cook for at least 2 minutes. Set the onions aside for just a few minutes. In the same large skillet heat 5 T of oil and sauté the garlic for 1-2 minutes. Stir in the broccoli rabe and sauté for about 10-15 minutes, add the onions and stir to combine. Cook for additional 1-2 minutes and then add the steamed potatoes for another 2 minutes then remove from heat. Let cool for 2-3 minutes, then dust with parmesan cheese and enjoy.
