Red Wine Braised Cabbage

(this recipe was designed with the December 2-3 Meals Box in mind)

Ingredients:

1 head of red cabbage, cut in half, cored and chopped

2 small onions, Sliced

2 cloves of garlic, chopped

2 cups red wine

½ cup apple cider vinegar

1 T salt

1 T black pepper

3 T olive oil

Directions:

This is a great side dish or you can use this as a sandwich topping, it goes great with roast beef or leftover turkey! Start by heating a large soup pot and add the olive oil and sauté the onions for 2-3 minutes, add the garlic and continue to sauté for an additional 2 minutes. Next add the chopped cabbage and stir until the onions and garlic are incorporated into the cabbage. Add the red wine and apple cider vinegar, stir everything together and reduce to low heat and simmer covered for 15-20 minutes. Make sure you stir your cabbage every few minutes to make sure you are not burning the bottom.
