Clean Eating Stuffed Mushrooms

Ingredients:
20 mushrooms (rinsed, wiped dry with paper towel, stems removed – save the stems!)
1/2 cup Greek yogurt
1/4 cup ricotta
1 egg
1 Parmesan
1/4tsp pepper
1/4tsp cayenne
1/4tsp onion powder
Mushroom stems (chopped small)
1Tbs minced garlic
2 slices turkey bacon (cooked crisp, chopped small)
1 cheddar


Instructions: 
Mix yogurt, ricotta, egg, Parmesan, and spices. Chop stems and sautée with garlic until soft and fragrant in a skillet sprayed with coconut oil spray. Cook bacon strips and chop small. Let bacon and stem mixture cool. Then mix with the yogurt mixture and spoon into mushrooms. Top with 1 shredded cheddar. Bake on greased sheet at 350 for 20min. Five mushrooms per serving. So good!
