Yellow Sweet Potato Tots
Ingredients:
2 yellow sweet potatoes, peeled and chopped
2 Tbsp flour
salt
pepper
paprika
frying oil (vegetable)
Creamy Dipping Sauce:
2 Tbsp mayonnaise
1 Tbsp Dijon mustard
1 Tbsp honey
pinch of salt
Instructions:
Steam sweet potatoes for 15 minutes and then allow for them to cool. Add sweet potatoes to a food processor and roughly chop, leaving the sweet potatoes chunky. Scoop sweet potatoes into a large bowl and mix with flour, salt, pepper, and paprika. Form small cylinder tot shapes from the sweet potato mixture and place on a baking sheet.
Heat frying oil on medium high. Use enough oil so that it is deep enough to cover the tots. Test the temperature by sprinkling water on top of it. When the oil is hot enough, it will start to pop when water is sprinkled over. Heat 8-10 tots for 3-5 minutes. When the tots are golden, remove them from oil and place in a large bowl covered by a paper towel.
Make the dipping sauce by mixing all of the ingredients in a small bowl. Serve with tots.
