Butternut Squash Mash
2 small-medium butternut squash
2 yellow sweet potatoes
1/2 tspn nutmeg
1/2 tspn cinnamon
1/2 tspn cloves
salt and pepper
Cut off butternut squash ends and peel. Slice the butternut squash in half, scoop out the seeds, and cut into cubes. Peel sweet potatoes and apples and cut into cubes.
Combine butternut squash, sweet potatoes, and apples in a large pot. Add enough water to the pot to cover everything. Bring water to a boil and cook for 15 minutes or until tender. Drain the pot and blend ingredients using a food processor or a hand mixer. Add almond milk as you bend to arrive at desired consistency. Add spices, salt, and pepper to taste. Serve warm.
