Lamb Lettuce Wraps (Serves 4)

Ingredients:
2 teaspoons canola oil
1 cup finely chopped onion
2 teaspoons minced fresh garlic
1 teaspoon Worcestershire sauce
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
10 ounces lean ground lamb

Yogurt Sauce:
1/2 cup chopped fresh parsley
2 tablespoons fresh mint (optional)
1/2 cup chopped tomato
1/2 cup chopped cucumber
1 cup plain fat-free Greek yogurt

8-12 lettuce leaves
Crispy Onions (like French’s fried onion topping), optional

Instructions:
Heat a large skillet over high heat. Add oil to pan; swirl to coat.
Add onion, garlic, Worcestershire sauce, salt, black pepper, and ground lamb. Sauté 5 minutes or until lamb is browned.

Combine parsley, tomato, and cucumber in a medium bowl. Stir in lamb mixture. Combine yogurt sauce ingredients in a small bowl.

Place a heaping spoonful of lamb mixture in each lettuce leaf. Top lamb mixture with 1 tablespoon of yogurt sauce.
