Jalapeno Poppin Stuffed Chicken

1 pound chicken (2 breasts)
4 Tbsp cream cheese
1 cup shredded cheddar cheese
2 jalapenos, diced with seeds removed (leave seeds for more spice)
8 pieces of bacon
Preheat oven to 350 degrees F.
First, cut the chicken breasts in half the width side. Individually wrapping each one in plastic wrap, then with a meat tenderizer, flatten out each piece until it becomes thin. Heavily season each side with salt and pepper.
Spread 1 tbsp of cream cheese on each piece of chicken. Evenly distribute diced jalapenos and shredded cheddar cheese between the four pieces.
Roll up each chicken piece, trying to keep everything inside. On a aluminium lined baking sheet, place bacon in pairs of two spaced evenly. Roll up the bacon around each chicken piece. Bake in the oven for 30 minutes.
