When I was thinking about this recipe, I couldn’t find any food coloring in my house. And to be honest, I didn’t really want to use any. To my surprise, I found a lot of great ideas on the web for making your own food dyes with natural ingredients. Check out a list of different dyes here.

Green Goblin Deviled Eggs

Ingredients:
6 free range chicken eggs
1/4 cup mayonnaise
2 Tbsp sour cream
1 tsp white vinegar
1 tsp Dijon mustard
1/8 tsp salt
2 cup of spinach or parsley
salt
pepper
paprika

Eggs

Instructions:
In a medium sized saucepan, cover eggs with water. Bring the water to a boil on the stove. Once the water begins to boil, turn the head down to low, and let it cook for a minute. Remove from the heat and let it sit for 14 minutes. When the eggs cool, remove the shells under cool, running water.

Cut the eggs in half length way (the long way), gently remove the inside yoke into a small mixing bowl, and set the white egg on a serving platter or bowl. Mix in mayonnaise, sour cream, white vinegar, and salt with the yellow yoke in the small mixing bowl. Add the spinach or parsley into a food processor and grind it down until it is all chopped down into small pieces. Next, add the yoke mixture into the food processor and slowly blend together until the mixture begins to take on the green color. Evenly spoon back the green egg yoke mixture into the egg whites. Sprinkle graciously with paprika and large black pepper flakes for a spooky look.
