I’m often hearing from parents how they just can’t get their kids to eat greens.  Drizzling it with chocolate syrup just doesn’t seem to do the trick.  Who would’ve thought?

But my thought is, no matter WHAT you have to add to it to start, DO IT.  Better to have them consume produce covered in sugar than not consume it at all, at least to start.

So after I got my Farm Table Box yesterday, I started brainstorming some ways.

Kids (or at least mine) are suckers for cheese and eggs.  Add a little healthy fat from coconut flour and the taste is delish to literally sardines.

Combine that mixture with greens, and it just may work.

I had to experiment with the different methods.

Muffin tins are my go-to, but these were too gooey in the middle.  The smaller you make them, the better.  I suggest a silver dollar size, but you can also do  2-inch rounds.

You can make this dairy free by eliminating the cheese and adding more Nutritional Yeast… bonus points for more Vitamin B’s which are essentially the building blocks for all our bodily functions.

INGREDIENTS:

4 small potatoes (I used white)

1/2 cup greens (spinach, kale, etc.)

1/4 cup cheese

1/2 cup Nutritional Yeast

1 egg

1 cup flour (I used coconut)

1 cup tomato sauce (I used Simple Truth Organic 4 Cheese Marinara)

PROCESS:

Preheat oven to 400F.

Wash, skin and dice potatoes and remove stems from greens.

Place both in a blender and process until mashed and combined (5 seconds)

Add to a large bowl along with all other ingredients and mix well.  Add more flour or sauce depending on consistency.  It should be relatively wet, but able to form a shape.

Line a baking sheet with parchment paper and scoop out small silver dollar sized portions of the mixture to lay on the paper.  Using a spoon, flatten each silver dollar.

Bake for 15 minutes before flipping and baking another 5.

Cool before serving.
