Sweet Potato Hash with Vinaigrette

Servings: 2-3

Ingredients:
1 sweet potato
2 Tbsp olive oil
1 Tbsp butter
1 yellow onion
garlic powder
salt
pepper
paprika

Vinaigrette:
1 Tbsp honey
1 Tbsp apple cider vinegar
1 Tbsp Dijon mustard

Instructions:

Peel sweet potato and cut into cubes. Steam for 10-15 minutes until fork tender.

In a large skillet, heat olive oil and butter over medium high. Dice the onion and add to the skillet. Sprinkle with garlic powder. Cook for about 5 minutes.

When sweet potatoes are tender, season with salt, pepper, and paprika in a large bowl. When onions become translucent, add the sweet potato to the skillet. Cook for 3-5 minutes, flip, and cook for 3-5 minutes more until each side begins to brown.

In a small bowl, combine vinaigrette ingredients. Toss sweet potatoes with the vinaigrette in the same bowl used to season the sweet potatoes. Serve warm.
