Steamed Bok Choy

Ingredients:
2 large bunches bok choy (it simmers to a little the more the merrier)
2 cloves garlic, minced or crushed
2-3 Tbsp olive oil
1⁄2 onion, coarsely chopped
1 tomato, sliced
1 vegetable bullion
4oz water
1 Tbsp cilantro, coarsely chopped (optional)
salt and pepper to taste
Instructions:
Wash and cut bok choy into small or desired size (not too small as its simmers to a little). In a hot pot add olive oil, once hot and add garlic and onion and sauté until slightly brown. Add the bok choy, tomatoes, cilantro and stir. Add water, bullion, and cover to simmer at lower fire. In 3-5mins check for salt and add as desired. Cover and allow to simmer for another 3-5mins or until tender not mushy ( a little crunch is good).
