Ingredients:

1 bunch green/white spring onions, chopped (using all of the green)

1 bunch red spring onions, chopped (using all of the green)

1-2 head of spring garlic, chopped (only use about 3-5 inches of the green)

3-4 tomatoes, diced

1 lemon

1 lime

1 bunch of cilantro, chopped

1 T salt

1 T black pepper

½ T cayenne pepper

Directions:

Combine all veggies into a bowl and toss to combine. Squeeze the juice from the lemon and lime into a small bowl and whisk in the salt, pepper and cayenne. Pour the juice/ spice mixture over the pico and toss well to combine. Adjust salt and pepper to your taste. Cover and let sit for 1 hour before serving.
