This recipe was created with the October 7-8 Meals Box in mind

For the salad:

Be sure to clean and dry your lettuce before tossing with other veggies, the whole bag should serve 4-5 healthy portions

One bell pepper cut into strips

1 cucumber cut into thin slices

2 roma tomatoes (don’t use them all in the pasta dish!), sliced

½ white onion, sliced

Toss all ingredients in a large bowl, salt and pepper to taste

 

Directions for Cucumber Dill dressing for salad

(make ahead of time for best result)

1 cup minced cucumber

½ cup mayo

1 cup fat-free plain yogurt OR light sour cream

1/8 cup rice vinegar

½ teaspoon ground sea salt

½ handful of fresh dill, chopped

½ teaspoon lemon zest

2 tablespoons lemon juice

¼ teaspoon minced garlic

1/8 teaspoon ground black or white pepper

In large bowl, whisk ingredients until combined.  Allow flavors to meld in fridge for at least 6-12 hours. Keep chilled.
