Ingredients:

12-15 roma tomatoes, cut into quarters

½ small white onion, diced

6 cloves of garlic, peeled, smashed and roughly chopped

Salt and pepper to your taste

1 Tbs. dried thyme

Olive oil, a few splashes

1 bell pepper of any color, diced

A little parmesan cheese for topping

1 package of Bombolini Garlic Linguine, prepare according to package

Directions:

Preheat your oven to 360 degrees. Layout out the tomatoes, cut side down on a cooking sheet, season with salt and pepper and drizzle a little olive oil. Let tomatoes roast for about 15-20 minutes. Now, in a large non-stick skillet over medium heat add the dried thyme and after one minute add another splash of olive oil and saute the onions until they start to become clear, next add in the bell pepper and smashed garlic. Add the roasted tomatoes, juice and all to your skillet. Bring to high heat and begin to smash the tomatoes until they are completely broken down. Let this cook for about 8-10 minutes.  Lastly, add the cooked linguine to your skillet and toss to combine everything together. Top with shredded parmesan cheese and enjoy right away!
