Roasted Grape Tomato Spread

Makes 1 half pint jar

Roasting Grape Tomato Prep

Ingredients:

1 pint grape tomatoes
2 cloves elephant garlic, unpeeled
1 Tbsp thyme
olive oil
salt and pepper

Instructions:
Spread the tomatoes and garlic on a foil lined rimmed baking sheet. Drizzle with olive oil and sprinkle with thyme, salt, and pepper to taste. Roast at 350 degrees for about 30-45 minutes, or until tomatoes are soft and shriveled. Remove from oven and let cool. Add everything to a food processor. Be sure to peel the garlic first! Pulse until you get a chunky spread, adding salt and pepper to taste. Transfer to a half-pint jar and top with olive oil for storage. Should last about 1 month in the fridge or 6 months in the freezer.
