Roasted Spring Garlic Aioli
Ingredients:
2 cloves stalks of spring garlic
salt and pepper for seasoning
1/2 cup olive oil
1 cup mayo
1 Tbsp Dijon mustard
1 Tbsp Parmesan cheese
1/4 tsp paprika
olive oil (optional)
half a lemon (juiced)
Instructions
Preheat oven to 400 degrees F. Cut off bulbs and save the springs. Remove an outer layer of the garlic. Wrap garlic bulbs in aluminum foil. After forming a little ball with the aluminum foil, open the garlic ball back up and drizzle the garlic with olive oil. Season with salt and pepper. Roast in the oven for at least 50 minutes in a small baking pan (I stuck my aluminum ball of garlic in a bread pan).
Dice the garlic springs just before the garlic is done roasting. When the roasted garlic has had time to cool, blend the rest of the ingredients in a food processor until everything becomes smooth. Add olive oil if you need to thin the aioli. Add the lemon juice last and mix together. Refrigerate to allow the flavors to settle.
