Several handfuls of Baby Kale

1 bunch of spring onions, chopped

2 carrots, shredded

1 can of pitted black olives, sliced

Either sun dried tomatoes or diced tomatoes (at least 2 cups worth)

1 cup apple cider vinegar

½ cup lemon juice

¼ cup white distilled vinegar

1 cup of either pine nuts or toasted walnuts

 

In a small bowl whisk together the apple cider vinegar, white vinegar and lemon juice. Combine all of the veggies into a large bowl and toss well to combine. Pour over the vinegar mixture and toss well to coat everything. Let marinate for about 1 hour. This is a great dish to eat if you are needing a little cleanse or are looking to increase your dietary fiber intake.
