There is really nothing better than knowing your meal was picked 48 hours ago.
There’s also nothing better than a meal of limited cooking! This meal is complete with protein, complex carbs, and greens!
Ingredients:
4 ears of corn, shucked and shaved
1 carton of cherry tomatoes, sliced in half
2 peaches, pitted and diced
1 cup quinoa
1 TBS chili powder
oil
4 cups of baby spinach or other leafy green
Step one: Cook quinoa according to package but add 1/2 TBS chili powder. I usually use vegetable stock in lieu of water.
Step Two: Pour 1 tsp of oil into a pan and add the corn and 1/2 TBS chili powder. Saute until the corn soaks up the flavors.
Step Three: Make sure all of your fruits and veggies are sliced
Step Four: Place spinach/leafy greens in a large bowl
Step Five: Add tomatoes, corn, peaches and quinoa
And you have a limited time in the kitchen, big time on the flavor meal!
