Purple Sweet Potato Hummus

Ingredients:
1 pound (about 2) purple sweet potatoes, peeled and chopped
1 can of chickpeas, drained
1/4 cup tahini
1 elephant garlic clove, chopped
1/4 cup lemon juice, use additional if needed
2 tbsp olive oil
2 tbsp cumin
1 tsp cayenne
1 tsp paprika
1 tsp crushed red pepper
salt and pepper to taste
water

Purple Sweet Potatoes

Instructions:
Steam sweet potatoes for 15 minutes until they soften. Blend sweet potatoes, chickpeas, tahini, garlic, lemon juice, olive oil and spices in a food processor. Add water by 1/8 cup until desired consistency is reached. Add additional salt and lemon juice for preferred taste. Serve sprinkled with olive oil and paprika with peppers, carrots, and pita chips for dipping.
