I love my muffin tin… easy, toddler/baby-approved and fits just about anything. Today, it’s fitting these beauties
Peaches: A large peach has fewer than 70 calories and contains 3 grams of fiber. It’s also a good source of Vitamins A and C.
Carrots: Give you vitamin A and phytonutrients for beautiful skin, cancer prevention, and anti-aging, to name a few.
Simple plan and quick results.
Dice 3 peaches and grate 2 carrots into a large bowl.
Add 1/2 cup flour (I used almond-meal)
3 TBS flaxseeds (for omega 3s, lignans and healthy fats)
A sprinkle of cinnamon (for taste and for digestion)
1 scoop of vanilla protein powder or 3 TBS almond butter (I used Shaklee’s Vitalizing Protein)
1 egg
Mix well. Divide between a greased muffin tin and cook on 375F for 15 minutes.
Perfect for enjoying with an early morning sunrise!
