Mixed Baby Kale Salad

Ingredients:

1 bag of mixed baby kale, cleaned and remove any long stems and roughly chopped

1 pint of cherry tomatoes, cut in half and salted

1 cup olive oil

1 cup lemon juice

½ cup apple cider vinegar

A little salt and pepper

Directions:
In a small bowl whisk together the olive oil, lemon juice, apple cider vinegar and just a pinch of salt and pepper.  Place the chopped kale in a large bowl and then add the oil mixture and massage it into the kale for about 3 minutes (this is a perfect opportunity to recruit kids to help.) Lastly toss in the cherry tomatoes and then let the salad rest, covered for about 15 minutes prior to serving.
