Every Sunday, you can find me in the kitchen with my mason jars.

Each one a little different.  Each one with new surprises.  Each one making noon a little less stressful and a little more healthy around these parts.  Here’s how you can make your own using The Farm Table Box ingredients.

LAYER ONE: Wet Veggies

Here I used sliced tomatoes, but you can use anything with a little juice in them (squash, fruit, cucumbers, etc.)

LAYER TWO: Soft vegetables

Here I used avocado, but think peas, etc.

LAYER THREE: Hard vegetables (carrots, peppers, cooked beets, potatoes, etc.)  I used carrots and conveniently forgot to take a picture.

LAYER FOUR: Protein

Here I used a hard-boiled egg.  You can use chickpeas, grilled chicken, canned tuna, cheese, tempeh, quinoa.  Possibilities are endless.

LAYER FIVE: Greens

Top this jar off with some leafy greens.  Stuff it tight so you can fit a lot in!

Just store in the fridge until ready to munch.

OPTIONAL LAYERS: NUTS OR A CRUNCH

Once you dump the salad into a bowl, feel free to add anything that won’t sit well in the fridge, such as sliced almonds, sunflower seeds, chia seeds, etc.
