Grilled Summer Vegetable Salad 

Ingredients:

3 yellow squash, sliced

2 zucchini, sliced

2 ears of corn, shucked

2 tomatoes, cut into ¼’s

1 yellow onion, cut into 2 inch wide strips

Olive oil

Salt and pepper to taste

Lemon, cut into wedges

Directions: Toss all ingredients in a large bowl with olive oil, salt and pepper. Grill all veggies over high heat for about 5-8 minutes. Bring inside and let veggies rest for a few minutes. Cut the corn kernels off of the cob and then toss all ingredients together with just a touch more olive oil, salt and pepper.
