Golden Habanero Sauce

Prepare waterbath canner with 2 half pint jars. Sterilize jars and keep in hot water until ready to fill and process.
Warning: When handling habaneros, please wear rubber gloves!!
Ingredients:
1 1/2 cups of chopped carrots
1 chopped onion
1 1/2 cups white vinegar
1/4 cup lime juice
3 garlic cloves, minced
2 teaspoons salt
10-12 habaneros stemmed and chopped
Instructions:
All all ingredients EXCEPT habaneros to a stainless steel pot. Heat to full boil and then simmer for 15 minutes. Add chopped habaneros and cook an additional 5 mins. Stir occasionally.
Remove from heat and use an immersion blender, food processor, or standard blender to puree mixture until smooth. Fill jars leaving 1/2 inch headspace. Process 30 minutes.
