When the winter blues set in and start to get you down, it’s great to have a few batches of this stored in the freezer. Pop them out and serve over pasta, poached eggs, greenhouse tomatoes, what the heck—anything—and remember that spring is just around the corner.

 

3 oz. fresh basil

1 ½ cup grated parmesan

1 ½ cup olive oil

½  cup of water

¼ cup lemon juice

½ cup pine nuts or chopped walnuts

1 tsp salt

1 tsp black pepper

4 cloves of garlic

In a food processor add Basil, Parmesan, Nuts, Garlic, Salt and Pepper. Pulse several times until everything is combined. Then combine the oil, water and lemon juice in a small bowl and while the food processor is running on low speed, pour in the liquids until the mixture becomes very fine and smooth. Pour into a container and let rest in the fridge for about 15-20 minutes before eating.
