I love me some Dr. Praeger’s pancakes, especially for the kids. They are extremely basic ingredients and very convenient. But, I don’t love the price and, because they’re so basic, why not make them yourself? I have been trying to perfect them on my own and, minus the shape, this is the closest I’ll probably ever get.
Shred one zucchini and set in a colander as long as possible. I did it overnight.
Then skin and dice 4 red skin potatoes. Cook them on 400F for 20 minutes. Then mash completely and add to the zucchini in a bowl.
Add one egg and 1/2 cup of almond meal flour and mix well. Add any spices, such as garlic, rosemary or basil. Scoop onto a greased baking sheet in pancakes. Bake for 15 minutes. Flip and bake 5-10 more minutes. Then serve!
