Corn Carrot and Avocado Fritters!
Corn for its richness in vitamins A, B, E and many minerals and its high fiber content, that plays a significant role in the prevention of digestive ailments.
Carrots for its richness in beta-carotene for that improved vision.
Avocados for its heart-healthy monounsaturated fatty acids. Did you know avocados are actually a fruit?
The produce ingredients:
The specifics of the ingredients (makes about 10 fritters, depending on size):
2 ears of corn, shaved
1 avocado, peeled, pitted and diced finely
3 large shaved carrots
1 large egg
1 cup flour
salt and pepper to taste
1/4 cup cheese (optional)
The process:
Combine all in a bowl and mix well, making sure the egg completely covers the ingredients. Using your hands, form into “fritters.” You can saute these in oil in a frying pan, or you can lay them flat on a greased baking sheet and cook on 400F for 12 minutes. Then you can proceed to eat them. All. In one sitting.
