Ingredients
- 3-4 medium Heirloom Tomatoes or 1-2 big ones
- ½ pint of Fresh Blackberries (if the berries are a little tart simply toss them in a few pinches of sugar)
- 1 Jalapeno, seeded and chopped very fine
- 1 Green Bell Pepper, finely diced
- 1 small-medium Onion, chopped
- 1 handful chopped Cilantro
- ¼ cup lemon juice
- 2 Tbl Olive Oil
- A few pinches of Salt and Pepper to taste
In a food processor combine the berries and Olive Oil and pulse a few times until the berries are totally broken down. Next in a bowl combine the berry mixture with the finely chopped ingredients and stir together to incorporate everything. Let rest in fridge, covered for about 45 minutes.
