Ingredients

  • 3-4 medium Heirloom Tomatoes or 1-2 big ones
  • ½ pint of Fresh Blackberries (if the berries are a little tart simply toss them in a few pinches of sugar)
  • 1 Jalapeno, seeded and chopped very fine
  • 1 Green Bell Pepper, finely diced
  • 1 small-medium Onion, chopped
  • 1 handful chopped Cilantro
  • ¼ cup lemon juice
  • 2 Tbl Olive Oil
  • A few pinches of Salt and Pepper to taste

In a food processor combine the berries and Olive Oil and pulse a few times until the berries are totally broken down. Next in a bowl combine the berry mixture with the finely chopped ingredients and stir together to incorporate everything. Let rest in fridge, covered for about 45 minutes.
