Almost Autumn Soup
Ingredients:
Two cooked chicken breasts, bone in, or rotisserie chicken or turkey breast
Can of reduced sodium white beans, drained
Chopped onion
Three or four turnips, cubed
Small butternut squash, peeled and cubed
Turnip greens, chopped
8 cups of water
Two teaspoons or more of Thyme
Salt and pepper to taste
Instructions:
Shred chicken. Put chicken bones and all ingredients except for greens and thyme in a slow cooker. Cook on high for three hours or low for six. Throw in greens and spices for about ten minutes.
