A spin on your typical hummus, with a summertime flare. This appetizer or main meal includes the most effective nutritional supplement in existence- turmeric. Turmeric contains curcumin, a substance with powerful anti-inflammatory and antioxidant properties. In other words, EAT UP!
Wash, skin and dice 3 carrots
Same with one large head of broccoli
Saute in a skillet with 1 TBS oil, salt, pepper, garlic, red pepper, turmeric and cumin until soft. Add all to a blender along with 1/4 cup cooked chickpeas, 2 TBS lemon juice and 1/4 cup oil.
Blend until you get a hummus-esque consistency. Scoop into bowl and serve with any raw veggies!
This can act as a complete meal for one since it incorporates healthy fats (oil), protein (chickpeas) and vegetables! Or serve up as the appetizer at your next get together!
