This recipe coincides with our Meals Box delivered July 22-23, 2015
Ingredients:
3-4 Tomatoes cored, diced and seeded
2 Cucumbers partially peeled and diced
½ White or Red Onion, sliced
1 bunch of Mint, stems removed and chopped
Salt and Pepper to taste
1 cup White Vinegar
2 Tbs Agave or Honey
A few paper towels!
Directions:
Start by taking the core out of the tomatoes, then slice them into ¼ thick slices. Next gently remove the seeds from the tomatoes and then place slices onto a dry paper towel. Give the tomato slices a little salt and let them sit for about 15-20 minutes. While you are waiting for the tomatoes, you can whisk together a little salt and pepper along with the vinegar and honey. Make sure all of the honey has dissolved, next add the diced cucumbers and sliced onions to this mixture. Now use another paper towel to dab to top of the tomatoes, remove them from the paper towel and give the sliced tomatoes a rough dice. Gently combine the tomatoes with the onion and cucumber mix and lastly throw in the chopped up mint. Let rest in the fridge covered for about 30 minutes before serving.
