Ingredients:
1.5 pounds Sweet Italian Sausage
1.5 cups grated zucchini (1 large or 2 medium ones should do)
1/2 cup Chopped Red Onion
1/3 cup minced Parsley
¼ cup breadcrumbs
1 large egg
1 tsp ground black pepper
¾ tsp Salt
½ tsp minced fresh Rosemary
4 Bell Peppers, halved lengthwise and seeded
Directions:
Preheat oven to 350 degrees. In a medium size bowl mix together the first 9 ingredients until well combined. Fill Pepper halves equally with the sausage mixture. Arrange the pepper halves in a 9×12 inch baking dish. Bake peppers uncovered until the filling reaches 165 degrees and the tops are browned. You can top them off with the fresh chopped rosemary and maybe a little grated parmesan cheese as well!
