Very few ingredients with very little prep
Crisp
Daikon radishes, apples and pumpkin seeds give it that crunch.
Light
Light, clear dressing and Powerful
Fennel and kale are two powerhouse foods.
Fennel: relief from anemia, indigestion, flatulence (cough cough), constipation, colic, diarrhea, respiratory disorders, menstrual disorders, and benefits regarding eye care
Kale: One of the most nutrient-dense foods out there.
Ingredients:
- 1 bunch kale (destemmed and torn into bite-sized pieces)
- 1 bulb fennel, sliced into bite-sized pieces
- 1/2 daikon radish, peeled and diced
- 1 spring onion, peeled and diced
- 1 apple, cored and diced
- 1/2 large lemon
- 1/3 cup oil
- 3 TBS apple cider vinegar
- 1/2 cup roasted pumpkin seeds
- organic parmesan cheese (to top)
Instructions:
- Place kale, daikon, onion, fennel and apple chunks into a large bowl.
- In a smaller bowl, combine oil, apple cider vinegar and the juice from 1/2 a large lemon.
- Mix well. Taste test to see if it needs more of any of the ingredients.
- Pour dressing onto salad mixture and massage WELL so that all kale is coated.
- Sprinkle parmesan cheese and pumpkin seeds on top and serve.
