
Marinated Kale and Apple Salad
Ingredients:
1 bunch of curly kale, torn into small pieces removing the larger part of the stem
½ cup apple cider vinegar
¼ cup lemon juice
1 tsp sugar
1 tsp red chili flakes
salt and pepper to taste
½ cup roasted pecans
¼ cup Craisins
1 Gold Delicious apple, sliced into ½ inch strips
¼ cup olive oil
Directions:
Place the torn kale into a bowl and toss with vinegar, lemon juice, chili flakes and sugar. Let that sit for at least 20 minutes. Toss the kale once again, this time adding salt and pepper, pecans and apple slices. Remove salad from the bowl using tongs and place the greens into your serving dish, reserving the marinade in the bowl. Vigorously whisk in olive oil to the marinade mixture until everything is combined well. Now use this mixture to dress your salad.
