Classic Salsa
Ingredients:
3-4 Hanover tomatoes,
4 cloves of elephant garlic peeled and roasted (15 minutes @325F),
½ bunch cilantro,
just a little parsley,
juice of 1 lemon and 1 lime,
1 Tsp salt,
½ Tsp black pepper,
1 white or yellow onion peeled and quartered,
and 1/2 bell pepper remove the stem and seeds
Instructions:
Using your food processor, add the onions, roasted garlic and bell pepper. Pulse 2-3 times until those ingredients combine. Next add the tomatoes, citrus juice, cilantro, parsley, salt and pepper. Pulse again at least 2-3 times. Remove from processor and place into a covered bowl and let sit for about 30 minutes before you enjoy!!
