Quinoa Salad Bowl Starter
Ingredients:
1 cup quinoa
1 Tbsp olive oil
2 cups water
1 head of hydroponic bibb lettuce, julienned
2 roma tomatoes, chopped
Directions:
Rinse quinoa in a bowl and then remove the water through a fine mesh strainer. In a large saucepan, heat olive oil over medium high. Cook the quinoa in the olive oil for 1 minute. Add water and bring the water to a rolling boil. Cover and cook for 15 minutes (no peaking). Set off the heat for 5 minutes (still no peaking). Fluff with a fork and let it cool.
In large salad bowl, start layering your salad first by adding the cooled quinoa, then the lettuce, and then top with tomatoes. Add your favorite salad dressing when you portion to a smaller bowl. We suggest a lite honey mustard dressing.
