Brussel Sprouts Bacon Bliss

Ingredients:
4 slices of bacon, cut into ½” strips
1 yellow onion, chopped
1 golden delicious apple, peeled and chopped
1 Tbsp olive oil
1 pint Brussel Sprouts, stem end removed and sliced in half
Pinch of salt and fresh ground pepper
1 oz Old Church Creamery sundried tomato cheddar cheese, crumbled
Pinch of salt and fresh ground pepper

Directions:
Heat a large skillet over medium high heat. Cook bacon until it becomes crispy. Set the bacon aside in a paper towel. With the leftover bacon grease in the skillet, add the onions and cook until they become translucent. Then add the apple pieces and cook for 5 minutes.
In another skillet over medium heat, add oil and let it heat up. Add the Brussel sprouts and cook for 5-7 minute until a nice char begins to form on the outer layers. Season with salt and pepper.
While everything is still warm, combine the Brussel sprouts, onion, apple, and bacon in a large serving bowl. Sprinkle with sundried tomato cheddar cheese and toss.
