
Apple Slaw
Ingredients:
4 cups shredded or chopped cabbage
cup shredded or finely chopped carrots (use a box grater or food processor)
1 large apple, preferable a tart variety, sliced into matchsticks
Dressing:
2 Tablespoons apple cider (optional)
2 Tablespoons apple cider vinegar
1 Tablespoon honey
1 Tablespoon olive oil
Juice of 1 lime
1 teaspoon onion powder
1 teaspoon salt (or to taste)
½ teaspoon pepper (or to taste)
Instructions:
As you cut the apple, toss matchsticks in a bowl w. a splash of lemon juice (approx. 1 Tablespoon, but doesn’t have to be exact) and 2 cups of water. This will keep them from browning. Drain before adding them to the other ingredients.
Toss the cabbage, carrots and apple in the biggest bowl you can find, otherwise it will end up all over your counter. Yes, I’m speaking from experience!
Mix all of the dressing ingredients together.
Pour dressing over slaw mix and toss to coat evenly.
