You could call this salad the type of meal farm co-ops were made for. This is perfect for coming home from a long day at the office. If you’ve got chicken or tofu already prepped in the fridge, you’re really all set! If not, poach or fry an egg and throw it on top. There are a lot of variations to this meal and most ingredients are “optional” in a sense—so play around and make it your way!  

2 Tomatoes, sliced

1 Cucumber, sliced

1 Head (or as much as needed) of lettuce of your choice

1 roasted, salted, sliced sweet potato (cold/leftover is even better!)

Protein of choice—chicken, tofu, egg, tuna, etc.

Herbs of your choice—this week’s basil is perfect, thyme and mint are also great

A small handful of microgreens

A sprinkling of pine nuts, walnuts, or sliced almonds

Dressing of choice

Tear lettuce gently and place into large bowl (kids love helping with this part)! Top with cucumbers, tomatoes, and chilled sweet potato. Add protein of choice to top and then sprinkle on nuts and microgreens. Dress with your favorite dressing, or a little olive oil and vinegar.
