Try this super-simple recipe that will enhance its nutty flavor. Great for a snack for the little ones in place of potato chips or French fries. My little guy loves to help with stirring in the oil and adding the herbs!

Cut the potatoes into 1” pieces and toss in a bowl with a little olive oil, freshly ground nutmeg and fresh thyme. Add a little salt and pepper to taste and simply roast them on a sheet pan @ 350 degrees for about 25 minutes.
