This great (and very dapper-sounding) sweet potato is high in Vitamin A and has o grams of Fat and only 130 calories per 8oz serving. Follow these easy steps to make a healthier snack for you and the family.

Using either a mandolin or sharp knife, slice the potatoes as thin as possible and lay them out on a paper towel.  Give them a light coating of salt and pepper and then turn them over to the other side and do the same thing. In a deep pot with an inch or so of vegetable oil over high heat, lightly fry the sweet potatoes until they become crispy, approximately 3-4 minutes. Careful of any spattering grease—this is one recipe where little ones should probably clear the kitchen.
